Creamy Pumpkin Soup

According to Ayurveda, pumpkin is balancing to all doshas, especially fiery Pitta. Additionally this yummy soup helps to soothe inflammation.

Ingredients

Creamy Pumpkin Soup
  • 1 can (15 oz) organic pumpkin puree (or freshly baked pumpkin)
  • 1/2 - 3/4 cup free range chicken broth
  • 1/2 - 3/4 full fat organic coconut milk
  • 1 T coconut oil (or MCT oil)
  • 1 small shallot finely chopped
  • 1 - 2 fresh cloves of garlic (finely chopped or minced)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder (could use a fresh pepper finely chopped to season)
  • 1/2 tsp turmeric powder
  • 1/2" - 1" piece of fresh ginger grated (use more or less, based on personal taste)
  • 1 T coco aminos (this adds just the right touch of sweetness)
  • 1/2 - 1 tsp sea salt (salt to desired liking)
  • freshly grated black pepper
  • lime juice from 1/2 of a small lime

Instructions

  1. Heat medium sized pan over medium to high heat
  2. Add coconut oil
  3. Add shallots and sauté until translucent and tender
  4. Add minced garlic to cooked shallots, cook mixture an additional 60 seconds
  5. Add chicken broth, pumpkin puree, coconut milk, and spices, to shallots and garlic mixture
  6. Bring to a slow boil, reduce heat to simmer
  7. Simmer for at least 10 minutes
  8. Add grated ginger, coco aminos and lime juice just before serving
  9. To create an extra creamy soup, add cooled soup to blender or use an emulsifier

Notes

Ideas for toppings: coconut milk, feta cheese, parmesan cheese, toasted pumpkin seeds or nuts, finely chopped cilantro or other fresh herbs, evoo drizzle, evoo infused drizzle, pomegranate seeds, croutons, crushed parmesan crisp


If using a home baked pumpkin, the amount of chicken broth and/or coconut milk may vary
