Raw Almond Rose No Bake Cake Balls

Almond No Bake Cake Balls

Makes approximately 8 bites

Ingredients 

  • Soak a little more than 1/2 cup of raw almonds and cashews overnight

  • 1/3 c almond meal

  • 2 pitted dates soaked in warm water for (3-5 minutes)

  • Pinch of salt

  • 1 tablespoon coconut butter

  • 1 teaspoon almond extract

  • Optional 1/2 teaspoon vanilla extract

  • Optional 1/4 cup shredded unsweetened coconut

  • Optional, A few generous dashes of ground cinnamon

Instructions:

  1. Drain and rinse soaked nuts, allow to dry a bit on paper towel

  2. Drain dates as well

  3. Add all ingredients to food processor

  4. Pulse until it resembles a loose dough, it will most likely begin to form a dough ball. Be careful not to over blend.

  5. If the consistency is such that the ball will not hold it’s shape, then slowly add extra almond or coconut flour — until the ball forms and feels more solid

  6. Use clean hands to form whatever size bites you prefer, roll into ball shape

  7. Place on wax paper

  8. If you plan to add any type of chocolate coating, allow the bites to rest in refrigerator for at least 20 minutes before attempting to coat

  9. If using white chocolate add about 1/2 teaspoon of coconut oil to the white chocolate, heat over double broiler stirring until it melts.

  10. Roll the cooled balls in the melted chocolates

  11. Allow to cool on wax paper

  12. Store in airtight in refrigerator

If you don’t have a double boiler, you can use a pan. Add a shallow amount of water to the pan. Then place a dry heat resistant glass bowl inside the pan filled with water, add chocolate chips, warm over lowest heat, stirring often.

Optional toppings Ideas: powered sugar, cinnamon sugar, white chocolate, milk or dark chocolate. If you add any type of chocolate coating white the chocolate is cooling on the bites, you can add sprinkles of rose petals, chia seeds, hemp hearts, shredded coconut, sea salt, the ideas are endless
