Raw Coconut Cacao Truffles

A beautiful raw truffle featuring almonds, pumpkin seeds, dates, cacao, raw honey, coconut oil, and a hint of salt


Total time to create: 20 minutes

Ingredients:

  • 1 cup raw almonds

  • 1/4 cup raw pumpkin seeds

  • 1 Tbsp cacao powder

  • 1 Tbsp organic dark chocolate chips 85% cacao

  • 6-7 whole dates soaked in warm filtered water for at least 15 minutes (save and set the date water aside, you may need)

  • 1/4 teaspoon cinnamon

  • 2 teaspoons organic coconut oil

  • pinch of Himalayan salt

  • 1/4 cup finely shredded coconut

  • Raw honey, sweeten to your preferred taste (if you prefer this may be left out of the recipe)

Instructions

  1. Place almonds and pumpkin seeds into food processor, and process until the consistency is similar to almond meal (take care not to over process otherwise you will end up with nut butter)

  2. Next add cacao powder, dark chocolate chips, soaked dates (pits removed), cinnamon, salt, and coconut oil and blend until well mixed

  3. Add shredded coconut by hand and mix well with a spoon

  4. Gently add a small amounts of date water only if the consistency is not sticking together

  5. Place in frig for 15 minutes, roll into approximately 1 inch balls

  6. May roll the balls in a variety of powders, such as cacao powder, matcha green tea powder, powdered sugar, cinnamon sugar, finely ground nuts, etc.
