Coconut + Dragon Fruit Nice Cream

with Basil | Vegan + Dairy-free


This concoction is scrumptious - the creamy coconut infused with the intense and bright flavor of pitaya (dragon fruit) —I honesty can’t get enough!

Pink dragon fruit also known as strawberry pear cactus is a punchy little fruit. It is loaded with vitamins, nutrients, and minerals, making it a superfood! It graces us with energy, dietary fiber, healthy fat, and rich in protein. Packed full minerals such as potassium and magnesium, as well as, vitamin C and B complex. As if that weren't enough, it boast carotene, and powerful antioxidants.

This recipe is super easy to create and something your whole family is sure to enjoy!

Luscious and Delectable

Ingredients:

14 oz full fat organic coconut milk

1/4 cup of raw unfiltered honey

1 teaspoon Singing Dog organic vanilla extract

1/4 teaspoon finely chopped fresh basil leaves (may omit for a more kid friendly version)

dash of Icelandic sea salt

1/2 cup frozen pink dragon fruit (available year around)


Directions:

Combine coconut milk, honey, vanilla, and sea salt into a blender or mixer. Blend until nice and creamy. Adjust flavor to your liking. Add finely chopped basil, stir with a spoon to disperse evenly throughout mixture. Pour coconut milk mixture into a to a freezer-safe container. Set aside.

Making the dragon fruit swirl:

Rinse and clean blender. Add dragon fruit, a splash of honey or sweetener and a touch of sea salt to blender. Blend for a few seconds, until pureed. Start on one end of the coconut milk mixture and slowly pour dragon fruit puree in the center, as if to create a line of dragon fruit in the center of the coconut milk mixture. Use a big spatula to pull, softly stir and swirl the dragon fruit through the coconut cream. Do your best not to over stir.
